I handsaw the dovetails because you can get alot of different styles and shapes that you can't get with a machine. You may not be able to reproduce a 'perfect' fit but it is well worth the effort. It did take some time to learn how to saw them however.
Every woodworker probably has their own way of cutting them. To me there is no wrong way, just whatever works for you.
